Best time to run maintainence

Mods/Admins/VIPs,

Sometimes I need to fix PJ and that means taking down PJ for some time, say a few hours. Sometimes it's a matter of minutes.

When do you think is the best time to do this kind of maintenance? What are the most busy times of the day?
