HARA CHOLIAA spicy green chana curry served hot garnished with paneer cubes Preparation Time : 15-20 mins Cooking Time : 20-30 mins Servings : 4 INGREDIENTS Fresh hara chana 3 cups Salt to taste Oil 5 tablespoons Cumin seeds 1/2 teaspoon Onions, finely chopped 2 large Garlic paste 1/2 teaspoon Ginger paste 1 tablespoon Coriander powder 1/2 tablespoon Red chilli powder 1 teaspoon Turmeric powder 1/4 teaspoon Cumin powder 1 teaspoon Garam masala powder 1 teaspoon Cottage cheese (paneer), 1/2 inch cubes 300 grams Green chillies, slit 2-3 Tomatoes, quartered 2 medium Fresh coriander leaves, chopped 1/2 cup FOR CHANNA MASALA Pomegranate seeds (anardana) 1 tablespoon Cumin seeds 1/2 teaspoon Coriander seeds 1 teaspoon Kachri powder 1/2 teaspoon Whole dry red chillies 2 METHOD Cook hara cholia in three cups of water with salt for twenty to twenty five minutes or pressure cook for five minutes. Drain and reserve cooking liquour. Coarsely powder all the ingredients of chana masala. Heat three tablespoons of oil in an iron kadai and add cumin seeds. When they change colour, add onions and sauté till pink. Add ginger paste, garlic paste, powdered chana masala, coriander powder, red chilli powder, turmeric powder and half the cumin powder. Add boiled hara cholia with the reserved cooking liquour and one cup of water. Add salt, garam masala powder and let it cook for five to six minutes. In another pan, heat the remaining oil, add slit green chillies, remaining cumin powder and tomatoes. Cook for a minute and add to the hara cholia mixture in the kadai. Stir and allow cook on low heat till almost dry. Add paneer cubes, stir gently and continue to cook for another two minutes. Serve hot garnished with chopped coriander leaves.

DAL MAKHNIA rich and delicious dal fit for a party. Preparation Time : 8-10 hours Cooking Time : 40-50 minutes Servings : 4 INGREDIENTS Whole black gram (sabut urad) 1/2 cup Red kidney beans (rajma) 2 tablespoons Salt to taste Ginger, grated 2 inch piece Oil 1 tablespoon Butter 3 tablespoons Cumin seeds 1 teaspoon Onion , chopped 1 large Garlic, chopped 6 cloves Tomatoes, chopped 4 medium Garam masala powder 1 teaspoon Cream 1/2 cup Red chilli powder 1 teaspoon Ginger, cut into thin strips 1/2 inch piece Fresh coriander leaves, chopped 1 tablespoon METHOD Soak sabut urad and rajma overnight in three cups of water overnight. Drain. Pressure-cook the sabut urad and rajma in three cups of water with salt and half the grated ginger for eight whistles or till soft. Heat oil and butter in a thick-bottomed pan. Add cumin seeds. When they begin to change colour add onion and fry till golden brown. Add remaining grated ginger, garlic and tomatoes. Sauté till tomatoes are well mashed and oil starts to leave the masala. Add cooked dals to this. Add two cups of water and adjust seasoning. Add garam masala powder and simmer on very low heat for fifteen minutes. Reserve two tablespoons of cream for garnish and add the rest along with red chilli powder and mix. Let the dal simmer for another five minutes. Garnish with ginger strips, coriander leaves and the reserved cream and serve hot with naan or parantha.

BUTTER CHICKENButter chicken or murgh makhani is an Indian dish from the Punjab region popular in countries all over the world that have a tradition of Indian restaurants. Preparation Time : 4- 6 hours Cooking Time : 30-40 minutes Servings : 4 INGREDIENTS Chicken 800 grams Lemon juice 1 tablespoon Kashmiri red chilli powder 1 teaspoon Salt to taste Butter 2 tablespoons For marinade Yogurt 1 cup Salt to taste Garlic paste 1/2 teaspoon Garam masala powder 1/2 teaspoon Kashmiri red chilli powder 1 teaspoon Ginger paste 2 tablespoons Lemon juice 2 tablespoons Mustard oil 2 tablespoons FOR MAKHNI GRAVY Butter 50 grams Ginger paste 1 tablespoon Green chillies, chopped 4-5 Red chilli powder 1 tablespoon Salt to taste Dry fenugreek leaves (kasuri methi) 1/2 teaspoon Whole garam masala 1 tablespoon Garlic paste 1 tablespoon Tomato puree 400 grams Garam masala powder 1/2 teaspoon Honey 2 tablespoons Cream 1 cup METHOD Make incisions with a sharp knife on breast and leg pieces of the chicken. Apply a mixture of red chilli powder, lemon juice and salt to the chicken and set aside for half an hour. Hang yogurt in a muslin cloth for fifteen to twenty minutes to remove extra water. Add red chilli powder, salt, ginger-garlic paste, lemon juice, garam masala powder and mustard oil. Apply this marinade to the chicken pieces and refrigerate for three to four hours. Put the chicken onto a skewer and cook in a moderately hot tandoor or a preheated oven (200°C) for ten to twelve minutes or until almost done. Baste it with butter and cook for another two minutes. Remove and set aside. Heat butter in a pan. Add green cardamoms, cloves, peppercorns and cinnamon. Sauté for two minutes, add ginger-garlic paste and chopped green chillies. Cook for two minutes. Add tomato puree, red chilli powder, garam masala powder, salt and one cup of water. Bring to a boil. Reduce heat and simmer for ten minutes. Add sugar or honey and powdered kasoori methi. Add cooked tandoori chicken pieces. Simmer for five minutes and then add fresh cream. Serve hot with naan or parantha. Recipe Tip : Heat kasoori methi in the oven for sometime or broil kasoori methi on a tawa/griddle plate to make it crisp. It can easily be crushed to a powder with your hand.

Ingredients: • 500 gms Lamb • 150 gms Lamb fat • 1 tsp Fennel seeds • 1 tsp Cayenne • 1 tsp Sugar • 1/2 Cup khoya • 1/2 Cup curd • 1 Cup milk • 2 tbsps Ghee • 1 tsp Kashmiri garam masala • 1 tsp Pepper • 1/2 tsp Ginger powder • 2 tbsps Oil • Salt to taste How to make Gustaba: •Mix lamb, fat, fennel seeds, ginger and garam masala properly. •Chop the mixture properly •Add curd and ghee while chopping •Once it turns smooth, make balls from this mixture. •Heat the oil and put garam masala, sugar, khoya, curd and milk. •Add mutton balls and cook it till it turns tender. •Gustaba is ready.

Here we will post yummy paneer recipes for paneer lovers.... Firstly i wll star with paneer tikka PANEER TIKKA RECIPE Ingredients: 1 Large block of Paneer 1 onion 1 Capsicum 1 Tomato Few Mushrooms Finely chopped Coriander leaves To Marinade: 1/2 cup Curd (plain yogurt) 1 tsp Garlic paste 1 tsp Ginger Paste 2 tsp Tandoori powder 1 tsp cumin (jeera) powder 2 tsp Chaat powder Salt to taste Red chili Powder to taste How to make indian paneer tikka recipe : Cut Paneer into long 1/2" thick cubes. Cut all vegetables into cubes. Mix all ingredients for marinade and keep aside. Add the left marinade to the vegetables. Brush the marinade to the paneer and refrigerate it for 3 hours. Heat oil in a kadhai and fry marinated paneer till fully done. Also fry other vegetables. In a plate arrange fried vegetables and then paneer. Garnish with coriander and lemon slices Serve tandoori paneer tikka hot with hari chutney.
