I once wrote this tutorial for someone who wanted to convert videos to mp3 by themselves (in other words, don't use online sites)

Here's how:

1. get firefox
2. install this firefox addon: https://addons.mozilla.org/en-US/firefox/addon/3006
3. go to youtube video page, then tools > downloadshelper and get the flv file
3. install this flv to mp3 software: http://www.smallvideosoft.com/downloads/freez_flv2mp3.exe
4. software works very easy to convert the downloaded file, just try.
