Im a sucker for southwest/Mexican/Mediterranean/Italian food : try this one out, it's a delicate fluffy flavorful delight that's sure to please :ok: Ingredients : 1 1/4 cups vegetable broth 1 1/4 cups water 2 cups pearl (Israeli) couscous ( or whichever couscous you own, may be substituted for quionwa ) 1 pinch salt 1 pinch ground black pepper 5 tablespoons olive oil, divided 1/2 cup pine nuts 4 cloves garlic, minced 1 shallot, minced 1/2 cup sliced black olives 1/3 cup sun-dried tomatoes packed in oil, drained and chopped 1 cup vegetable broth 1/4 cup chopped fresh flat-leaf parsley For this reciiii you'll need to Bring 1 1/4 cup vegetable broth and water to a boil in a saucepan, add in/stir couscous, and mix in salt and black pepper. Reduce heat to low and simmer until liquid is absorbed, about 8 minutes. Heat 3 tablespoons olive oil (whatever you feel is right) in a skillet over medium-high heat; stir in pine nuts and cook, stirring frequently, until pine nuts smell toasted and are golden brown, about 1 minute. Remove from heat.Heat the rest of the 2 tablespoons olive oil in a saucepan; cook and stir garlic and shallot in the hot oil until softened, about 2 minutes. Stir black olives and sun-dried tomatoes into garlic mixture and cook until heated through, 2 to 3 minutes, stirring often. Slowly pour in 1 cup vegetable broth and bring mixture to a boil. Reduce heat to low and simmer until sauce has reduced, 8 to 10 minutes. Transfer couscous to a some sort of serving bowl, mix with sauce, and serve topped with parsley and pine nuts(or whatever you feel is right) It should twiggle your tastebuds because it sure is a epiphany :he: So for this, i've never physically taken a picture of my finished product due to the fact it's been a while since i made it : so sorry, this is a online image , the point being it's to help with a visual aid :ok: 1092

Mexi Pasta Ingredients : seashell pasta (much as you like) 2 tablespoons olive oil 2 onions, chopped 1 green bell pepper, chopped 1/2 cup sweet corn kernels 1 can black beans, drained 1 can peeled and diced tomatoes or 1 cup freshly cut tomato 1/4 cup salsa 1/4 cup sliced black olives 1 1/2 tablespoons taco seasoning mix salt and pepper to taste All you need to do is ~Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. ~While pasta is cooking, heat olive oil over medium heat in a large skillet. Cook onions and pepper in oil until lightly browned, 10 minutes. Stir in corn and heat through. Stir in black beans, tomatoes, salsa, olives, taco seasoning and salt and pepper and cook until thoroughly heated, 5 minutes. Toss sauce with cooked pasta and serve. :ok: 1096

Peppermint Fudge (or any candy of your liking) :he:
So since the holidays are near we are all looking for baked goods to share around the fireplace in honor of the christmas spirit : but if your like me, time is a factor that isn't in our favor. This recipe takes a decent 5 minutes to prepare and you just need a fridge to finalize your product :laugh: :ok: simple , yet tastes amazing :) Ingredients : Cooking spray ( needed for spraying the foil ) 3 cups semisweet chocolate chips One 14-ounce can of sweetened condensed milk Red and white peppermint candies, crushed, for topping (whichever candy suits your taste ) Directions: So take a 8-inch square baking pan and line it with foil. Spray the foil with cooking spray. (this prevents it from sticking later on ! ) In a saucepan (preferably medium in size) set your stove to a low heat ( varies depending on the type of stove you have ) , put the chocolate chips and sweetened condensed milk into the pan, stir until everything hasl melted and looks smooth. Gently, Pour the mixture into the pan you previously set up, spread it thoroughly to even out the surface. Sprinkle on the crushed candies of your liking and then place in the fridge. Refrigerate for 2 hours. When ready, Gradually lift the foil out of the pan and peel it off the fudge.
